325gm Mascarpone cheese
115gm/4oz caster sugar
60ml/2 fl oz coffee liqueur (Tia Maria)
2tbsp cocoa powder
1tsp instant coffee powder (dissolve in water)
1tsp vanilla extract
3 packets chocolate chip cookies (good quality)
Chocolate shavings for garnish
Put all of the above ingredients (except for the cookies and chocolate shavings) in a bowl and mix slowly with an electric mixer until they combine. Then increase the speed slowly until stiff peaks form.
To assemble the cake, arrange a layer of cookies on the bottom of a springform tin, covering the bottom as much as possible. You may need to break some to make them fit. Spread a third of the mocha mixture over the cookies. Continue to layer the cookies and mocha mixture, finishing with a layer of mocha. Cover the cake with clingfilm and refrigerate overnight.
The cake needs to be made the day before and will last several days.
